- Observation: Dishwasher reached 71C/160F+ (77C measured inside of the machine) - ok - this should result in 82F/180F measured on the final rinse water temperature gauge. The dishwasher however did not seem to be working properly to go through all cycles.
- Corrective Action(s): The dishwasher is to wash, rinse, and sanitize utensils. Ensure dishwasher goes through all cycles (wash, rinse, sanitize). Check daily. If dishwasher is not used, then utensils can be sanitized manually using 200ppm quats. Note that all utensils, cups for customers are single use only.
