      • The sanitizing step when manually washing dishware at the 3 compartment is not being properly conducted.- Proper manual dishwashing practices involves the use of a chemical sanitizer at the required strength or the use of hot water (minimum temperature of 82C/180F)- Operator will use a 100 ppm bleach water solution going forward.
