      • Observation: High temperature dishwasher is not in good working order according to the Operator's spouse (person in charge on duty).
      • Corrective Action(s): Operator's spouse informed a technician is scheduled to assess and repair the dishwasher by the end of this week on January 9, 2026. She informed that they have been manually washing, rinsing, and sanitizing their preparation utensils via the 2-compartment sink, and using single-use service utensils only.

      • Repair the high temperature dishwasher so that the dishwasher is in good working order to effectively wash, rinse, and sanitize the preparation utensils/storage containers, and it achieves the sanitizing standard of dishwasher final rinse temperature of at least 71 degrees C at the utensil level; Correct by January 9, 2026. In the interim, ensure to use single-use service utensils only and manually wash, rinse, sanitize in 100 ppm chlorine sanitizer, and air dry the preparation utensils. Bleach was available on-site.
