      • Sanitizer spray bottle >200PPM of bleach. PHI prepare and demo one with operator. Please utilize test papers to check sanitizer concentration.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Observed staff water bottle and medication store next to cake prep area.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Dishpit area/rack storing clean utensils/dishes - observed broken strainer and spatula. Please replace. Discarded at time of inspection.

      • Potato/vegetable mix is being improperly cooled. Proper cooling procedures were discussed. Cooling at room temperature must be done within 2h. Cooling can be sped up by portioning the potato/veg mix into multiple shallow containers.
