- Observation (CORRECTED DURING INSPECTION): Cheesecake observed stored in under-counter preparation cooler at salad/dessert bar. Preparation cooler measured at internal temperature of 16'C. Staff moved the cheesecake to the walk-in cooler (at or below 4'C).
- Corrective Action(s): Verify cooler temperatures (as per approved food safety plan) to ensure potentially hazardous foods are stored at or below 4'C at all times. All potentially hazardous foods which are kept at room temperature for more than 2 hours must be discarded. Do not store any potentially hazardous foods in the aforementioned cooler until it has been repaired and is measured at or below 4'C.

- Observation (CORRECTED DURING INSPECTION): 0ppm concentration of DDBSA based sanitizer recorded for multiple sanitizer bottles. Automatic dispensing unit was used to fill these bottles. Concentration recorded at the dispensing unit was 0ppm. Manager called the technician to service the dispensing unit and will have it repaired by the end of the day. 200ppm bleach solution was prepared at the time of inspection and all the spray bottles were refilled.
- Corrective Action(s): - Ensure that an approved food grade sanitizer is available during facility operation to adequately sanitize all the food contact surfaces/equipment.

Staff had advised all were packaged last night and placed in the walk-in cooler overnight-> transferred to this unit at 9-9:30am. All discarded at this time.
