      • 2. Staff stated they are only using detergent when washing dishes.
      • Corrective Action(s): 1. Always have surface sanitizer prepared and apply it on food contact surfaces between and after use.
      • Use 1/2 tsp of bleach per litre of water to make a 100-200 ppm bleach solution.
      • 2. Dishes must be washed, rinsed and sanitized (with bleach or another approved sanitizer) and air dried.

      • Corrective Action(s): Clean and sanitize this area with 1000ppm Chlorine solution (Bleach and water mixture of 1 part bleach and 49 parts water)

      • Corrective Action(s): Operator to ensure noted area is finished with a smooth, non-porous, and easily washable surface to encourage cleaning and to prevent the entry of pests.

      • Observation: 1. Old rodent droppings noted behind cook line, underneath dry storage shelving, in area next to oven, and in laundry room. 2. Cooling racks for baked goods noted with moderate build-up of food debris.
      • Corrective Action(s): Operator to ensure noted areas are cleaned and sanitized with a dilute bleach solution at 100ppm. A dilute chlorine solution can be made using 1 tablespoon of 5.25% unscented bleach to 1 imperial gallon of water. Solution can be applied to a cleaned surface and allowed to air dry.

      • Corrective Action(s): Employee on-site stated bleach solution is only made when cleaning is being done. Sanitizer solution must be available for use at all times. Mix 1 oz of bleach with 1 gallon of water for proper concentrations.

      • Corrective Action(s): The operator stocked the handwashing station with soap and paper towels. All handwashing stations must be stocked with cold/hot running water, soap, and paper towels at all times.

      • Observation: There was build up of dirt and grease on wire racks inside the walk in cooler.
      • Corrective Action(s): Thoroughly clean the wire racks as part of our monthly cleaning schedule.

      • Observation: 1) The ambient temperature of the walk in cooler was measured at 10C.
      • 2) The ambient temperature of the display cooler adjacent to the wall was measured at 12C.
      • Corrective Action(s): Call for service. Fix the coolers and ensure they maintain temperature < or = 4C at all times.
