    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation:
      • Processed food items have "made on" dates, but staff do not know how long each food item can be stored for, before throwning it out. This confusion could have staff using food items passed their best before dates.
      • Corrective Action(s):
      • Retrain staff and post info for each processed food item and the duration they can be kept, before throwning out. OR, start placing the date the food shall be "use by". This way staff don't need to remember the different storage durations for different foods. They see the "use by" date has passed, they throw it away.

      • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation:
      • 1) Mould found on the interior surfaces of the small, new ice making maching under the espresso machine. Mould will contaminate the ice and could make customers ill.
      • 2) Dust accumulated on the ceiling near the dishwashing sink. The dust could fall into food and contaminate it.
      • 3) Plexiglass around the mop sink has accumulated food stains on it. This could attract pests.
      • Corrective Action(s):
      • 1) Wash and sanitize the interior sufaces of the small, new ice making machine to remove the mould. Add the interior cleaning of the ice making machine to the Cleaning Schedule, so it is cleaned regularly.

      • 2) Wash the ceiling to remove the accumulated dust.

      • 3) Wash the plexiglass to remove the food stains, and add this to the Cleaning Schedule so it is cleaned regularly.

      • 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
      • Observation:
      • 1) Found aluminum foil covering various surfaces in the kitchen (walls, drip trays, back splashes, trollies) and staff stated they change it every 2nd day. Foil is not cleanable or durable and MUST be changed at the end of every night. This was discussed in the last 2 routine inspections.
      • 2) Found plastic protective coating on the new, small ice making machine and on one side of the exhaust canopy above the baking ovens. The plastic is not cleanable and its purpose is only to ensure the equipment is not scratched during transportation and installation.
      • Corrective Action(s):
      • 1) Immediately remove all foil from surfaces and STOP covering surfaces with foil. Staff must clean all surfaces every night and do NOT cover with foil.
      • 2) Peel off the plastic protective coating off of the mentioned machines.

    • 401 - Adequate handwashing stations not available for employees [s. 21(4)]
      • Observation (CORRECTED DURING INSPECTION):
      • The designated handwashing sink, in the front coffee area, has been changed into a rinsing sink for the drink blenders. Staff are unable to wash their hands easily or frequently, as a rinsing wand has been installed on the faucet head.
      • Corrective Action(s):
      • Immediately remove the rinsing wand and install it on the faucet of the coffee station "dumping sink", OR designate the coffee station "dumping sink" as the handwashing sink and install a liquid soap & paper towel dispenser beside this sink. During the inspection, staff deicided to move the rinsing wand to the coffee station "dumping sink".

    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation (CORRECTED DURING INSPECTION):
      • Metal ice scoop was being stored inside the ice making machine. The handle of the scoop has bacteria on it, from staff's hands, and this bacteria will get onto the ice.
      • Corrective Action(s):
      • Immediately remove the ice scoop and store it in the designated, clean food insert on top of the ice machine. Retrain staff on the proper storage method for the scoop. During the inspection, the ice scoop was moved to the food insert.

      • 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
      • Observation:
      • 1) Aluminum foil was covering the backsplash of the gas range and the wall behind a kitchen prep table. The foil had accumulated food on it, and head chef stated the foil is changed every week. The accumulated food will attract pests, and foil is not cleanable or durable.
      • **Correction date: Today**
      • 2) Protective, plastic was found on equipment surfaces (top of dishwasher; sides of prep sink in bakery area; top of wall shelves in hallway), which is not durable or cleanable.
      • Corrective Action(s):
      • 1) Remove the aluminum foil EVERY night, clean the surface, and place new aluminum foil on every morning. If you do not wish to do this, do NOT cover with aluminum foil.
      • 2) Peel off the protective, plastic on the mentioned surfaces so the stainless is exposed and is cleanable. During the inspection, staff peeled of the plastic.

      • Observation:
      • Rack storing clean cookware is beside the mop sink. Dirty mop water could splash on clean cookware and contaminate it.
      • Corrective Action(s):
      • Install a durable, non-porous, and cleanable barrier on the rack to prevent dirty mop water from splashing on clean cookware.
      • **Correction date: Sept.27/24**

      • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation:
      • 1) Back room ice machine has mold/mildew on the interior surfaces of the ice bin and mechanisums. The mold/mildew will contaminate the ice and could make people sick.
      • 2) Accumulation of food debris and grease found on surfaces between equipment and prep tables in the kitchen. This will attract pests.
      • 3) Food stains found on walls behind and below equipment, racks, sinks, and prep tables in the kitchen. This will attract pests.
      • Corrective Action(s):
      • 1) Clean the interior surface and mechanisum of the ice machine. Ensure this is done on a regular basis.
      • **Correction date: Sept. 16/24**
      • 2) Clean the surfaces and walls between equipment and prep tables, and behind and below equipment, tables, sinks and racks. Ensure this is done on a regular basis.
      • **Correction date: Sept. 21/24**

      • Observation:
      • Aluminum foil is covering surfaces and has accumulated food and grease on it. Staff stated they replace the foil when it gets too dirty. The accumulate food and grease will attract pests.
      • Corrective Action(s):
      • Remove and discard aluminum foil at the end of each night, if you continue to cover surfaces with it.

      • 310 - Single use containers & utensils are used more than once [s. 20]
      • Observation:
      • Observed kitchen staff wearing single-use, disposable gloves to complete different tasks. The gloves are contaminated/dirty and must be changed between tasks as they will spread germs and are NOT washable.
      • Corrective Action(s):
      • Immediately discuss the proper use of single-use, disposable gloves with staff. It is recommended that disposable gloves are not worn, as this will promote staff to wash their hands more frequently.
