- Food storage areas need to be organized to ensure that food is protected from contamination:1) All the food items should be stored at least 15 cm above the ground in the proper shelves.2) All the chemicals, cleaners and non-food items including personal items must be stored separately away from food items.

- Dirty pizza pan and pizza slicer were observed in the one compartment sink, at the back of facility.Sink was observed in very dirty condition (probably used as a mop sink).Operator was asked to immediately remove the dirty dishes from indicated sink.Three compartments sink was not set up for dishwashing.Make sure to follow the appropriate method for dish washing including sanitization.**Sink stoppers are required to soak dishes in third compartment for sanitation**.

- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- Facility does not have an approved food safe sanitizer for cleaning food contact surfaces. Staff complied to mix a bleach solution at a concentration of 100 ppm.
- 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
- Staff was promptly instructed to do one of the following:1. Submerge the scoops in ice-cold water to maintain a safe temperature and prevent bacterial growth, the water must be replaced every 2 hours OR sooner when the water is murky. OR2. After every use, wash, and rinse with soap and water and then dry with clean paper towel and store the cleaned scoops in a protected container inside the refrigerator immediately, maintaining a temperature below 4 degrees C. At the end of the day, wash and sanitize all scoops and utensils in a bleach solution with a concentration of 100 ppm for 2 minutes and then allow them to air dry. This practice will prevent growth of foodborne bacteria.

- Test strips not available to validate the solution concentration of the bleach. - Staff was given extra test strips to be used for the next few days. Please procure a chlorine test strips.
