    • 03. Is all food in this facility fit for human consumption and not unwholesome, spoiled, or adulterated?
      • Dented can of ketchup stored in the preparation room.Canned foods should not be kept once they are damaged or dented to avoid the growth of foodborne botulism and its toxins. Inspect canned food regularly and prior to use and discard if damaged/dented. The operator discarded the canned ketchup at the time of the inspection.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Raw chicken stored on the bottom shelf of the preparation room at room temperature and measured 12C. The operator was working on a different tray at the time. High risk foods should not be stored at room temperature as this allows bacteria to grow. Take out one tray at a time to ensure raw chicken are not stored at room temperature for long periods. The operator placed the raw chicken in the cooler at the time of the inspection.

      • Some mice droppings were observed near the bait station 10 in the basement. Clean up the droppings and continue with the pest control program. Also email the inspector the last two most recent pest inspection reports.

      • Mice droppings were observed in the basement behind the door of the basement chemical storage room. Pest control reports were not available on site. Provide inspector with the pest control reports from the last three months. Clean up mice droppings and monitor. If more are found after cleaning, ensure adequate pest control measures are taken.**OUTSTANDING (2023-09-28). Mouse droppings were still observed in the basement behind the door of the basement chemical storage room. The inspector provided the staff with instructions and information on how to properly and safely clean the droppings. Pest control records were not available during the inspection.
