- 1) The ambient temperature of the cooler was tested using an infrared thermometer and measured at 10.8C. A probe thermometer was used to test the ambient temperature of the cooler and measured at 5.8C. The internal temperature of the alfredo sauce was tested using a probe thermometer and measured at 10C.The cooler was observed to be overfilled and low-risk food items like buns were removed to make room in the cooler for cool air to circulate.2) The internal temperature of the alfredo sauce in hot holding units were tested using a probe thermometer and measured at 49C.The trays were immediately transferred to the chaffers where three Sternos were recommended to be used instead of two. The other trays of alfredo sauce were sent back to the main kitchen to reheat. The inspectors were informed that the Alfredo sauce will be brought back later in the afternoon.

Alfredo sauce measured around 50C.-As facility did not have enough capacity to reheat all of the product, instructed operator to send some product back to store to reheat and hot hold, and reheat the rest of the product onsite in chafing dishes and cooking units
