- The Quat sanitizer in the spray bottles and the sanitizer sink in the 3-compartment sink was measured at 0ppm.A new solution was prepared by the operator for the spray bottles and in the sanitizer sink of the 3-compartment sink which was tested at 200ppm.-Ensure that the Quat sanitizer is maintained at 200ppm.

- The Quat and chlorine test strips had expired.-Purchase new valid test strips.

- A tray was placed on top of a garbage can to be use as a prep table. Provide a proper prep table.

- 1) Slight dust build-up on the oven canopy support bars. Clean these bars. 2) Cardboards were used to cover the walk-in cooler storage shelves. Remove cardboard and clean shelves when they get dirty.
