      • Sandwich prep. table still not holding <= 4C / 40F in foods. Unit was adjusted by owner during inspection and corrected.
    • 35(1) - OPERATOR FAILING TO HAVE QUALITY ASSURANCE SYSTEM.
      • Acquire accurate and easily readable chef's metal stemmed probe thermometer for monitoring temperatures. Monitor all refrigeration units at least twice daily and keep records available for audits.

      • Cease use of dish drying towels. Air dry or use single use (paper) toweling if needed immediately. Clean to remove buildups, the washroom fixtures.
    • 33(1) - OPERATOR FAILING TO CONTROL TEMPERATURE OF FOOD SO FOOD DOES NOT DETERIORATE OR BECOME INEDIBLE OR UNSAFE.
      • Sandwich prep. table not holding <= 4C / 40F in foods. all meats & cheese recently placed were relocated to other working refrigeration. Unit must be serviced / adjusted & holding <= 4C before reuse for potentially hazardous foods.
