      • Personal items are being stored with food in dry storage room (e.g. backpack sitting on box of avocadoes). Store personal items separately (e.g. on own shelf).
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Some of the walls in the dry storage room are unfinished (wood studs). As foods and fridges are in this room, properly finish walls so that they are smooth easily cleanable and impervious to moisture (e.g. painted drywall).

      • No temperature logs of fridges and freezers are being done. Please check temperature of fridges and freezers each day you are open and record them.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Personal items are being stored with food in dry storage room (e.g. backpack sitting on box of avocadoes). Store personal items separately (e.g. on own shelf).
    • 09. Are chemicals stored and handled in a safe manner?
      • One spray bottle of sanitizer was not labelled as to its contents. Corrected during inspection.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Some fish and meat were being thawed at room temperature. Advised to thaw in cooler or under cold running water. Surface temperature were still 4C or less. Put into cooler during inspection.Some sliced cucumber was sitting out on the top of the prep cooler. Was at 13C. To be store in the cooler. Corrected during inspection.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Dishes were being dried with a cloth after coming out of the dishwasher. Utensils are to be air-dried. Corrected during inspection.

      • No pH strips for testing the pH of the sushi rice to ensure pH is <4.6. Obtain pH testing strips that read from 3-5.5 or a pH meter.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Most of the kitchen ceiling has acoustic ceiling tiles which are not easily cleanable and impervious to moisture. Replace the acoustic tiles with ones that are smooth, easily cleanable and impervious to moisture.The wooden table under the exhaust hood has some unsealed wood. Wood to be sealed/painted so that it is smooth, easily cleanable and impervious to moisture.The wooden board that the white food storage containers are sitting on is splintering. Replace with material in good condition and that is smooth, easily cleanable and impervious to moisture.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The outside of the white food storage containers are dirty. To be cleaned.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • The storage room is very cluttered. Please remove items not used/needed for operation of the restaurant.
