- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- 1) The sanitizer on the prep/ cook line was measured to be 0ppm. The sanitizer was re-mixed and tested to be 200ppm. Please ensure the sanitizer solutions being used are tested to be 200ppm. (Corrected during the inspection)2) There was no surface sanitizer available at the bar. Please ensure a surface sanitizer is available at every location food handling is occuring.

- (Outstanding violation) - October 18th, 2023: The paint was still observed to be peeling in the walk-in freezer. Please refinish the ceiling to protect from contamination. Basement walk in freezer ceiling paint is chipping and peeling. Please repair.

- Bowls were being used as bulk scoops. Please ensure all bulk scoops are equipped with a handle to protect from contamination when food handlers are scooping bulk food items.

- Bulk food items located in the basement kitchen were uncovered in storage. Please ensure all food is covered in storage to prevent contamination of the food item.

- 1) Iodine test strips could not be located at the time of the inspection. Please obtain Iodine test strips to be able to test and verify the concentration of the Iodine-based glass dishwashers. (12.5-25ppm)2) Quat test strips could not be located at the time of the inspection. The facility is using a Quat based sanitizer; thus, Quat test strips must be available for testing the sanitizer solutions. Please obtain Quat test strips to test and verify the concentration of the Quat surface sanitizer (200ppm).

- 1) The screen door off of the upstairs kitchen had a gap at the bottom of the door. Please close the gap to prevent pest entry. 2) The back door located off of the basement was left open at the time of the inspection. Please ensure exterior doors are kept closed to prevent pest entry.

- A light cover was missing from a light fixture in the basement kitchen. Please install a light cover to protect from contamination in the event of a light bulk breaking.

- The can opener located in the basement had a build-up of food debris and grime on it. Please clean and sanitize the can opener and add it to a regular cleaning schedule.
