- One bottle of chlorine test strips was no longer effective and would give false positive. The test strips were discarded. The operator has a new bottle of chlorine test strips.

- One section of the kitchen ceiling was patched up with a porous material.Replace the porous material with something that is waterproof and easily cleanable.

- Container for holding the shredded cheese was placed on top of the garbage can during shredding process. Provide a clean container or table for holding the food container.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Large prep cooler:Ham was measured at 10.0 degrees C and shredded cheese was measured at 9.0 degrees C in the large prep cooler inserts. Reduce bottom cooler temperature and store cold perishable food at 4 degrees C or below.

- 1) Drain/fruit flies were found at the bar. 2) Drink syrup build at the bar. Remove drain/fruit flies and clean the bar.

- Unfinished floor underneath the bar, this traps debris at the bar. Finish the floor.

- Debris and rust build-up on the walk-in cooler racks. Clean and resurface the racks.
- 23. Is the facility maintained in a clean and sanitary condition?
- 1) Grime build-up underneath the dishwasher and wall. 2) Debris build-up underneath the bar and unfinished bar floor traps debris. 3) Dust build-up on the kitchen air vents and pipes. 4) Grease build-up underneath the main kitchen line. 1 to 4) Clean these areas.
