    • 05. Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?
      • Foodhandler did not have hair tied back and was wearing a ring. Corrected during inspection.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The cooked onions were at 13C; more ice needed under and around the container of onions to keep them at 4C or less. Corrected during inspection.The fridge door was not completely shut; was at 10C. Fridge door shut and interior temperature cooled down to 4C.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Was advised that no dishwashing was going to be done on-site; extra utensils brought so that all could be taken back to the restaurant to clean and sanitize at end of the night. There was bleach on-site but no chlorine testing strips, should provide in case do end up needing to clean and sanitize items on-site.
    • 21. Is refuse being managed in a suitable manner?
      • The wastewater collection container did not have a lid/not enclosed. Wastewater to be in an enclosed container. Recommend a sump pump to pump directly into large wastewater tanks that are on-site rather than having to dump out wastewater container as were hooked up to water supply so could exceed capacity of wastewater container/could overflow.
    • 22. Is the temporary food establishment properly constructed, configured and maintained?
      • The sinks were located outside the tent. To be located inside the tent.
