      • Damp and soiled cleaning cloth was left on the counter. Pathogenic microorganisms can grow on cloth and increase the risk of spreading on food contact surfaces. Cleaning cloths must be stored in a sanitizing solution when not in use.

      • A scoop with handle (high-touch surface) was stored in direct contact with ready to eat food (chips). Store scoop outside the food container to prevent contamination of food.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Cooked shredded meat was found in the hot holding unit at an internal temperature of 45°C, as measured using a probe thermometer. This temperature falls within the danger zone (above 4°C and below 60°C) which can promote microbial growth and toxins. The food handler reported that the meat had been reheated and held in the unit for over three hours. Upon request, no temperature log was available to verify that safe holding temperatures had been maintained during this period. The shredded meat product was discarded due to the potential risk to food safety.
