    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • A container of garlic butter left on the countertop was measured at 22 C. The operator confirmed it had been at room temperature for over 2 hours. Keep high-risk foods below 4C or above 60C. Discard high-risk foods held between 4C and 60C for more than 2 hours. The garlic butter was discarded onsite.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • No evidence of vermin was observed; however, no pest control records were available for review. Please ensure that pest control measures are in place and that monthly records are maintained and available for review.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Light fixture in cold storage area was missing a cover. Please ensure all light fixtures are covered if not shatterproof.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Observed one wet cleaning cloth stored on a prep table along cookline and one wet cleaning cloth stored on prep table on the side prep area. Please ensure all wet cleaning cloths are stored inside sanitizer solution when not in use.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Observed a bag of onions (mesh bag) stored directly on the floor. Please ensure all food items stored properly off the floor at all times.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Observed a staff filling up a container or pot with the kitchen hand sink faucet. Please ensure designated hand sink are being used for handwashing only.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Back door in the kitchen - large gap/light at the bottom. Please replace with a new weatherstrip.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Prep freezer - observed built up of ice on the seal of the doors (might impact closing the door tight in the future). Please defrost and clean unit.
