- Observation (CORRECTED DURING INSPECTION): Soups are made in new restaurant Kang's Kitchen at 420 329 North Rd (same owner), cooled then brought over to Nadri. Soups are re-heated here for use. Staff stated that leftovers are put in the cooler for use the next day.
- Corrective Action(s): As soups have been through the danger zone (4-60C) once during the cooling process, you must only re-heat and use the soup once. Cooling the soup (if leftovers) will bring the food through the danger zone again. Discard the soup at the end of the day and do not re-use.

This can be achieved with an ice wand or ice bath, as discussed with the operator.
