   • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
     • - The domestic refrigeration unit was found to be in unsatisfactory working order. Multiple temperature readings obtained using both an infrared thermometer and a calibrated min/max hold probe thermometer indicated an internal temperature of 14 degrees Celsius. All potentially hazardous food items were removed from this unit and transferred to properly functioning commercial refrigeration units available within the mobile food unit. The operator was instructed to discontinue use of the domestic refrigeration unit until it has been adequately repaired and verified to be operating correctly, and to rely solely on the commercial refrigeration units that are maintaining appropriate temperatures.Please ensure that the domestic refrigeration unit is repaired or replaced as necessary so that all food is stored at required refrigeration temperatures, thereby minimizing the risk of foodborne illness associated with inadequate refrigeration.
