- 205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
- Observation (CORRECTED DURING INSPECTION): Various inserts containing ingredients in the kitchen (guacamole, deli meat, cheese, bacon, etc.) are being stored in plastic inserts set into large containers of ice. Staff indicate that some ingredients sit for several hours in these units before they are fully consumed. Temperatures of the food items in the inserts are above 4 degrees Celsius (~10-14 Celsius).
- Corrective Action(s): *Discussed possible solutions with operator:
- 1) Add cold water to the ice to promote better conductivity of the cold into the food inserts
- 2) Replace plastic inserts with metal inserts (better conductivity)
- 3) Limit the amount of foods items stored in the inserts, to prevent foods being above 4 Celsius for more than 2 hours (maximum time allowed at ambient temperatures)
- 4) Purchase a countertop refrigerator unit to store the food items at 4 Celsius (or below)
- *Operator directed to add cold water to the ice to improve conduction of cold temperature into the inserts while onsite, or alternatively, restrict the amount of food stored in each insert, such that they'll be consumed within 2 hours.

- Observation: Multiple scoops observed being held inside ingredient bags/bins with the handles in contact with the food ingredients (sugar, flour, etc.)
- Corrective Action(s): Adjust storage practices for scoops to ensure that the handles of the scoops do not come into contact with the food ingredients. (ie. remind all staff to store scoops in designated holders/containers, not deposited in the food ingredients).
