- The ventilation canopy above the pizza oven has an accumulation of grease. Ensure the canopy is cleaned regularly to prevent fire hazard and potential food contamination at the bottom.**Please clean.

- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- Wet cleaning cloths in the back area were stored on the counter and did not contain any chlorine (bleach) content. Cleaning cloths must be placed in a bucket with either a quat solution of 200ppm or a chlorine solution of 100 to 200ppm to remove contamination and prevent the growth of bacteria. The operator placed the cleaning cloths in a bucket of bleach sanitizer and was measured at 100ppm at the time of the inspection

- There were two phones that were visibly soiled and was placed on the preparation counter of the sandwich cooler where pizza is made.Articles that are not involved in food handling should not be placed on the food preparation counter. Placing the soiled phones on the preparation counter can contaminate the surface, therefore, contaminate any food that comes into contact with it. Refrain from placing the phones on food preparation counters. Clean the phones and place them on a surface that does not involve food handling. The operator removed the phones and sanitized the surface with a chlorine (bleach) sanitizer that was measured at 100ppm.

- Boxes of canned tomatoes in the back area are stored directly on the floor and are used to store flour on top. Please ensure all food are stored at least 6 inches above the floor to protect it from contamination. Obtain more shelves to store food or obtain pallets that are smooth, durable, and easily cleanable where food can be stored on top.
