- The QUAT test strips in use were not stored in a properly labelled container indicating type of test strip or its expiry date. Operator threw out those test strips and replaced them with new ones that were stored in a properly labelled container. Ensure that staff have access to satisfactory methods for measuring sanitizer concentration.

- Hot held nacho cheese sauce measured less than 60C (43C). All hot held products must be kept above 60C at all times. Ensure the temperature of these products are regularly monitored when they are displayed.

- Wiping cloth sanitizer solution did not measure for chlorine or QUAT and staff were not able to identify what chemical had been used to make the solution.Solution was discarded and staff were shown how to prepare a 100ppm chlorine solution during the inspection. Ensure this solution is changed at appropriate intervals to maintain the required concentration and test strips are used when preparing new solutions.

- Chemical spray bottles noted during the inspection were not matching the labels on the bottles and the labels were torn and faded from reuse.Staff could not identify what chemicals had been used to prepare the solutions in the spray bottles. No food grade surface sanitizers were available during examination of under sink chemical storage area.Solutions were discarded during the inspection. Ensure all chemical bottles are labeled to identify their contents.

- Cheese sauce in the hot holding display measured less than 60C (51.2C). Discussed hot holding requirements with staff onsite. Temperature of the hot holding unit was not being recorded in daily temperature logs - must be recorded whenever in use. Sauces were discarded during the inspection.
