- Corrective Action(s): Increase frequency of recycling to minimize the amount of materials held in the kitchen, or store the recyclables in another location, separated from the food premises.

- Observation (CORRECTED DURING INSPECTION): Container used to hold ice cream scoops is room temperature water. Storing scoops in this manner can allow germs/bacteria to grow in the water over time.
- Corrective Action(s): Option 1: Store the ice cream scoops in ice water instead. When the ice has melted, replace the ice water with a fresh solution.
- Option 2: Wash and dry the ice cream scoops after each use. Store the clean scoops in a clean, empty container while not in use.

- Observation (CORRECTED DURING INSPECTION): Chlorine concentration in the sanitizer pail (wiping rag storage) was below 100ppm chlorine concentration (~10ppm). Bleach was added to the solution at time of inspection.
- Corrective Action(s): *Ensure to keep the sanitizer solution at 100-200ppm by mixing fresh solutions regularly.
- *Note: Lemon-scented bleach is not food-grade. Ensure to rinse surfaces that contact food after applying the sanitizing solution. Alternatively, switch to regular unscented bleach, which does not require a rinse after application when used at 100-200ppm concentration.
