      • Observation:
      • Dust accumulation on ceiling tiles above the pizza oven, and minimal grease accumulation on the stainless steel walls (especially below and behind prep tables). The dust may fall into food and grease will attract pests.
      • Corrective Action(s):
      • Clean the dust off the ceiling tiles and ensure to do this on a regular basis (weekly). Wash the stainless steel walls with hot water and soap/degreaser to remove the grease on a daily basis.

      • Spray bottles storing Quats sanitizer are not labelled to differenciate spray bottles with water or degreaser. Staff could accidently spray chemicals on food or food contact surfaces, and customers could ingest it, causing them to become ill.

      • Label all spray bottles with "Sanitizer" to ensure staff know what is in the bottle.

      • Food debris and grease found in corners, on the floor along the base of walls, on walls behind food prep tables, and table legs. Food and grease will attract pests.
      • Corrective Action(s):
      • Scrub with soap and hot water to remore the food and grease debris in the mentioned areas. Increase the frequency at which this is done.
