      • ** - improper thawing of 2 bags of raw chicken was observed: one bag was tucked under the oven, the other just sitting on the counter at room temperature. The external temperature was already 10'C. Cease and desist the practice of thawing raw meat at room temperature. Thaw safely by choosing one of 4 methods: 1. ice bath 2. microwave 3. in the cooler overnight 4. under COLD RUNNING water.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • ** - The handsink in the back kitchen and one of the faucets of the 3 comp sink was leaking water - please repair.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • ** - do not use tape on food equipment for repair or otherwise. Cooler door, oven door. All surfaces within a food facility must be smooth, cleanable, nonabsorbent and durable - tape does not fit this definition.

      • A chemical spray bottle was observed without a label. Ensure all chemicals are maintained with labels. The operator labeled the indicated spray bottle during the inspection.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • A wooden guard on the utensil holder above the 3-compartment sink is observed to be in disrepair and is no longer smooth, durable and easily cleanable. Ensure that the indicated wood is sealed to be water resistant and easy to clean or is removed. The operator removed the indicated wooden guard during the inspection.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • A metal sifting utensil is observed to be in disrepair and with a buildup of rust and is no longer smooth, durable and easily cleanable. Ensure that the indicated utensil is replaced or discarded. The operator discarded the indicated utensil during the inspection.
