Thawing potentially hazardous food products at room temperature is not permitted. -Thaw potentially hazardous food products in a refrigeration unit at or lower than 4C. or -Thaw potentially hazardous food products using continuous running cold potable water method. In accordance with Section 3.3.3 of the Nova Scotia Food Services and Food Retail Code, you must store potentially hazardous foods at a temperature of 4 degrees Celsius or less. - In accordance with Section 3.3.5 of the Nova Scotia Food Services and Food Retail Code, you must hold all hot foods at a temperature above 60 degrees Celsius. Potentially hazardous food product noted below 60C was discarded by staff during the time of inspection. Hot holding unit was taken out of service, during the inspection, until the unit has been serviced by a professional.
