- 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done:
(a) the food establishment and equipment are maintained, cleaned and sanitized;
- Operator must ensure that the mechanical dishwasher is repaired or replaced and upon repair/or replacement that the rinse temperature reaches at least 180F during the rinse cycle. Staff must switch to manual dishwashing in the triple sink until the dishwasher is repaired or placed and reaches the rinse temperature of 180F or higher. (Complied During inspection)
