      • 1. No surface sanitizer solution was available during food preparation. The staff member prepared a 100 ppm chlorine solution as instructed. A sanitizer solution must be available at all times during food handling.2. Used wiping cloths were observed on various surfaces in the back kitchen area. Staff were instructed to store wiping cloths in a sanitizer solution between uses, with soiled cloths placed in a designated dirty linen container.

    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The handwashing sink in the front service area was not in use, as the water supply was turned off and the sink was blocked by a large container and utensils. Staff were instructed to turn on the water supply and stock the sink with hand soap and paper towels. Handwashing sinks must be accessible at all times and fully stocked.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1. An accumulation of grease and dirt was observed on the ventilation hood, including the filters and nozzles. This must be thoroughly cleaned to prevent contamination. The unit was due for servicing in January 2024 and must be maintained to reduce fire hazards.2. Cardboards were observed in the upright cooler in the back of house being used for shelving. Please remove them and ensure shelving materials are smooth, non-absorbent, and easily cleanable.
