      • Multiple high-risk food items were held below 60C. PHI instructed booth operator to replace food items every 2 hours if the temperature could not be raised above 60C. Ensure that all high-risk food items are stored above 60C.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • No hand wash station was available during the initial inspection. Operator had the handwash station set up while the inspector was onsite. Ensure that a handwash station is set up before any food handling occurs.
