- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- High temperature dishwasher - Temperature on the gauges reached requirement for wash and rinse cycle. However, maximum temperature recorded at the dish level on my min/max probe thermometer was 66.1C after running the machine 3 times (must be minimum 71C). Please have the machine checked and ensure it reaches required temperature at the dish level prior to starting to use it again. Until then manager will be using single use cups, etc. for serving beverages and food. Also, 3 compartment sink is available for manual dishwashing.Please email the undersigned for follow up inspection after the issue is resolved.
