- Observation(s): A double sink is now installed in the rear area. Sign and procedures are posted. Excellent. However, rather than drying wares in the second sink (potential for contamination and improper drying), install a drain rack on the counter to the left sink to improve air drying. Note Question 14.

- Observation(s): Renovations were made to improve efficiencies but without an approved plan. Although primarily cosmetic, the layout is basically the same for this location and is therefore acceptable.
