      • Thermometer was not observed inside the prep cooler used for storing milk in the kitchen area.Ensure to place the thermometer inside the indicated cooler to monitor cooler temperature.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • The water tap for the manual dish washing sinks was observed to be leaking at the time of inspection.Ensure to maintain all plumbing fixtures in good working condition.

      • Vangard general purpose cleaner was used in the kitchen. This disinfectant cleaner is not an approved surface sanitizer as it requires a second wipe to remove excess residuals.The operator was instructed to switch to chlorine bleach sanitizer solution in the kitchen and was instructed on how to properly mix and accurately test chlorine sanitizer solution. Operator was informed to test the chlorine sanitizer mixture every time it is made (100-200ppm). Please obtain chlorine test strips to verify the solution's concentration.

    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The surrounding walls behind and beside the dry equipment storage area/shelves (where the plates, bowls, and stainless steel pots/pans/prep bowls are located) is damaged. The walls are peeling, scuffed up, and dented.Please repair and refinish the walls and ensure that it is smooth, easy to clean, and in good repair. Recommend placing a durable material/barrier on the walls to prevent future damage.
