      • The chlorine in the sanitizing container containing used cleaning cloths was measured at 0ppm. Operator mixed a new solution.**Please ensure that the chlorine solution used for storing cleaning cloths or for sanitizing food prep surfaces is maintained at 100ppm at all times.

      • Packets of raw chicken breasts were stored next to pastry sheets and burger buns in the chest freezer under the grey shelving at the back storage area. There was no clear separation of raw food items from ready to eat food item. Operator removed raw chicken and placed in plastic bins before placing in separate section of the freezer.**Store raw food items separate from ready-to-eat or cooked foods at all times to prevent cross contamination of food.

Operator stated food items were made 3 hours prior to inspection. Food items were discarded.**Do not store high-risk foods at room temperature.**Cooked high risk foods, sold as ready-to-eat should be held in hot holding and maintained at 60 degrees C and above or placed in refrigerator and stored at 4 degrees C and below at all times
