      • Rice in the warmer measured 40°C at the time of inspection, which is within the temperature danger zone (4–60°C). Operator confirmed the rice had been in the warmer for approximately 2 hours. Product was moved to refrigeration during the inspection. Rice is reheated prior to placement in the hot holding table.
