      • Observation (CORRECTED DURING INSPECTION): Tray of lamb noted covered at room temperatuer. Operator stated it was taken out of the oven 20 minutes ago and is cooling.
      • Corrective Action(s): Cover taken off. Do not cover hot foods while cooling as this will trap steam.
      • *Cool foods from 60C-20C within 2 hours before placing into the cooler. Use probe thermometer to check temperature.

      • Observation (CORRECTED DURING INSPECTION): Tray of greek potatoes stored on bottom shelf at room temperature. Probed at 19C. Staff stated it was taken out in the morning (>2 hours ago) to be reheated.
      • Corrective Action(s): Greek potatoes discarded. Take out potatoes when needed to be reheated during meal rush. All cold foods must be stored at 4C or colder.

      • 401 - Adequate handwashing stations not available for employees [s. 21(4)]
      • Observation (CORRECTED DURING INSPECTION): Bar handsink missing liquid soap.
      • Corrective Action(s): Liquid soap in dispenser provided. All handsinks must be stocked with hot and cold running water, liquid soap, and running water.

      • Observation: 1) Foods (eg. onion bags, chicken broth powder, oil, etc.) stored directly on the floor.
      • 2) Foods not covered in the prep coolers and walk in coolers.
      • 3) Spices stored in water pitchers.
      • 4) Bleach spray bottles measured over 200ppm. Bleach out test strip.
      • Corrective Action(s): 1) Store all foods at least 6 inches off the floor.
      • 2) Cover all foods in prep cooler and walk-in coolers.
      • 3) Store spices in container with a tight fitting lid.
      • 4) Bleach solution remade during inspection. Measured at 200ppm. **Mix 1 tsp bleach to 1L water - use test strips to verify concentrations**

      • Observation: 1) Pipe leaking underneath dishwasher. Two trays noted to catch water.
      • 2) Handsink in front kitchen hallway (across POS) no hot running water available, liquid soap, or paper towels. Operator indicated it has been turned off.
      • Corrective Action(s): 1) Repair pipe as leak can attract pests.
      • 2) Turn on hot water and provide liquid soap in dispenser and paper towels. All handsinks must be supplied with hot and cold running water, liquid soap, and paper towels for handwashing.
