- A chlorine sanitizer (100 ppm) was prepared during the inspection.

- A 3-compartment sink, test strips, and a container of bleach was available. But the operator was not following proper procedures according to his description. Please ensure you always follow the 4- step process - clean, wash, rinse and sanitize.

- Lemon scented bleach is being used for sanitizing food equipment. Please remove the lemon scented bleach and use only unscented bleach moving forward.

- Mouse droppings were observed on the floor in two corners of the kitchen. Please clean up the mouse droppings and begin maintaining monthly pest control reports.
