    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • No approved sanitizer was observed at the facility at the time of inspection. The operator was instructed to purchase a bottle of bleach immediately. When purchased, use the chlorine test strips available at the facility to ensure the required 100ppm chlorine sanitizer solution concentration is used to sanitize food contact surfaces, equipment or utensils.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1. A box of pork meat was moved out from the cooler and kept on the counter to continue thawing. The temperature of the meat was measured to be at -1C. The operator was instructed to move the meat back to the cooler during inspection.Please note that meat can be properly thawed under cold running water or inside the cooler.2. Two crates of eggs were observed on the top of the chiller cooler. The operator moved the eggs into the cooler during inspection. Please only bring out eggs from the cooler in small quantities as needed.

      • Some coolers and freezers in the facility were missing thermometers. Please ensure all coolers are supplied with functional thermometers.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The paper towel dispenser at the handwashing sink in the kitchen was empty. Loose paper towels were placed close to the sink during inspection for temporary use. Please refill the paper towel dispenser.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Pest control records were not observed. A pest control checklist was given to the operator during inspection. Ensure monthly pest control records are maintained and made available for review during inspections.

      • Temperature of the Chiller cooler is recorded 11 degrees Celsius.
