- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Lunch of a chicken, rice and veggies meal was being prepared. The cook said the lunch was cooked just before 10am. The temperature at 10:45am was at 25C. High risk hot food after it is cooked to a temperature of 74C is to be hot held at 60C. About 10 minutes prior to service start cooling the food and ensure it is below 37C before serving.Food was reheated to 74C.
