    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • Corn cheese in single used food containers were stacked directly on other corn cheese in the buffet line coolers.-Cover each container of vegetable before stacking.-Ensure food is protected from contamination from the bottom of the food container.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • The main buffet for hot holding cooked chicken had no sneeze guard at the front entrance.-Ensure sneeze guard is installed to prevent food contamination.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Chicken in containers at 11.1*C were left on food cart at the front kitchen to thaw. Operator stated food was out less than 2hours. Operator returned food to prep cooler.- Ensure frozen food are being proper thawed at all times by either keeping in the fridge until thawed, microwaving for immediate use or thawing under cold running water.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Chemical dishwasher was at 0ppm. Gaps were noticed in the pipe. Operator corrected the gap and ran the dishwasher couple of times before testing at 100ppm chlorine.-Ensure to test dishwasher before each use.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • 1. The handwashing station at the front station was blocked with food cart. Operator removed item.- Ensure handwashing station is always accessible2. No paper towel in dispenser at the handwashing station beside the staff washroom and 3-compartment sink at the main kitchen. Operator replaced item.-Ensure there is paper towel in dispenser for hand drying at handwashing station.3. No soap at the 3-compartment sink at the main kitchen. Operator replaced item.-Ensure there is always soap in dispenser for handwashing.

      • 1. The two storage rooms at the kitchen appeared to be unorganized.-Ensure the rooms are organized for easy cleaning and visual inspection2. The following areas had dust/dirt, grease or food debris build up:i. ceiling and vents at the main kitchenii. top surface of the dishwasher iii. can or tin opener at the kitcheniv. vent canopy/hood at the main kitchen-Clean the indicated areas-Ensure all areas are clean and well maintained
