      • Observation(s): F1.7A, B and C In the bakery food prep area, light covers were observed coated with dust and the breads in the rolling racks stored underneath the dusty light covers (2x)are subject to falling dust ( being blown by the air supply diffusers mounted on the ceiling) soiled oven mitts need to be stored in a sanitary manner and washed when required- please designate an area to hang clean mitts and use a container/hamper labeled "mitts for washing" to ensure un-clean mitts are not used for handling trays and/or baked food

      • F1.7B Ready-to-eat foods must be stored in a manner that prevents cross contamination.
