    • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
      • Observation(s): - all three sanitizer bottles located in deli area next to deli slicers had 50ppm quat solution. bottles were emptied and replenished with fresh solution @200ppm at time of inspection - recommend to empty bottle daily, and replace with fresh solution daily - allow sanitizer to run through line for a few seconds prior to filling to ensure adequate concentration has been reached
      • F2.3D Sanitizer solution must be available and kept at the correct levels for adequate sanitizing action.

      • Observation(s): - please ensure all items required to be refrigerated or frozen are put away as quick as possible when received. a cart of frozen product was at -5C and left outside for an hour at time of inspection before being put away
      • F2.4A Potentially hazardous frozen food must be maintained at -18 °C (0 °F) or colder.
      • F2.4B Potentially hazardous food must be thawed using appropriate equipment and/or approved methods.

      • Observation(s): Accumulation of food debris observed to be flaxseeds found behind a bakery equipment.

      • Observation(s): Provide thermometers in refrigerator units that are not connected to the computer system. Provide hot holding units with a thermometer.

      • Observation(s): To provide a copy of the operator/manager FOODSAFE certificate.
