    • 23(1)(b) All equipment and utensils used to process, prepare, store, serve, sell or display food must be designed, constructed, installed and maintained to (b) allow adequate cleaning, sanitizing and maintenance.
      • Deli self-cleaning oven requires servicing to allow adequate cleaning, sanitizing, and maintenance during its clean cycle. Current imbalance is resulting in significant mess around the unit.

      • Ensure that the knife holders in the deli area are regularly cleaned and sanitized. You may consider purchasing a specialized brush to facilitate cleaning their inside surfaces.
