    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Mechanical dish machine in the back kitchen was several times as a satisfactory result was not obtained. It appears that the pump needs to be adjusted for the present chemical. Last run a reading of 100 ppm chlorine was obtained. Ensure dish machine is calibrated and a sanitizing step is done every cycle.
