      • No sanitizer solution was initially prepared for use in the kitchen at the time of inspection. Operator prepared chlorine sanitizer solution during inspection and concentration was tested at 100 ppm.- As discussed, ensure that sanitizer solution is prepared at all times and maintained at adequate concentration.

      • Food in the cooler was stored in non-food grade rubber plastic containers.- All food must be stored in containers that are food-grade to prevent contamination.

      • Buildup of soot and grime noted on the ventilation hood. - Clean the canopy filters and ensure deep cleaning is performed as scheduled.
