      • Wet cleaning clothes were observed on the kitchen counters. Quat solution was prepared during inspection and cleaning clothes were immersed in it.Ensure sanitizer is prepared during food prep and cleaning clothes are immersed in the sanitizer.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Gravy in the hot holding unit was measured at 42C using a probe thermometer. Food had been in the unit for over 3 hours. Food was discarded during inspection.Food should not be moved from the cooler to the hot holding unit.Ensure food from the cooler is reheated to 74C before placing in the hot holding unit.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Hand sink was inaccessible. Ensure hand sinks are accessible at all times.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Pest control records were not available on site. Ensure pest records are made available on site.
