    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • ***Quat sanitizer solution was not being maintained at a 200ppm concentration. Corrected during the inspection. Staff made a new solution. Ensure that wiping cloths are stored in a sanitizer solution between uses and once done they are in a soiled laundry container.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • ***There were no thermometers present in the domestic refrigerators for checking the temperatures.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • ***Staff had no way of checking the concentration of the Quat sanitizer concentration. There were no Quat test strips available.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • ***Pest control records were not being maintained / available for review. The maintenance person had changed and the office had the building records on file. Discussed options and will provide a blank template.
