      • Observation (CORRECTED DURING INSPECTION): 1. Uncooked previously frozen fries in a large blue bin was stored next to the cook line at 19°C. The operator stated that the whole bin is stored at room temperature during busy hours. Then, the bin is put back in the cooler. At the time of inspection, no cutomers were found and noe online order came in.
      • 2. The batter for fish that is stored in the front of the deep fryer was measured at 9°C. The operator stated that the batter stays out all day. Then, changed the statement to the batter gets changed every 2 - 3 hours.
      • Corrective Action(s): All perishable foods must be stored at 4°C or lower at all tiems. When the perishable foodds stay in the danger zone between 5 - 59°C pathogens multiply which may cause foodborne illness when consumed.

      • Observation (CORRECTED DURING INSPECTION): 1. The sanitizer bucket was checked and measurd at 0ppm Quat.
      • 2. The Quat dispenser was measured at 0ppm at 12pm.
      • 3 The Chlorine dishwasher was measured at 0ppm.
      • Corrective Action(s): Repair. Ensure 200ppm Quat and 100ppm Chlorine sanitizer. Manual dishwashing is required. To be corrected within 1 day.

      • Observation: When entering the back part of the kitchen and opening coolers, sour smeill is observed. The floor is very slippery due to grease. The filters on the hood has black grease.

      • Follow the approved sanititation plan. To be corrected within 1 week.

      • Corrected during inspection - Staff got bleach and made bleach water solution for sanitizing surfaces, solution registered at ~200ppm when tested.
      • Note: Sink and Surface Sanitizer Solution running low, ensure to have an adequate supply at premises and check to ensure dispenser is functioning properly.
