- **The temperature of the meatball and sauce on the steam table was at 50C. A staff was asked how they reheated the meatball and sauce? The staff said they sometimes use the microwave and other times they use the steam table. On the day of the inspection, they used the steam table to reheat the meatballs and sauce. The staff were directed to reheat the meatball and sauce in the microwave.- Daily temperature logs were observed- All refrigerator units maintained safe food temperatures.ACTION REQUIRED:1) Cold food shall be rapidly reheated to a temperature of 74C before it goes on the steam table. The steam table cannot rapidly heat food through the temperature danger zone. Therefore, steam table shall never be used to reheat food.
