    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • **Upon arrival, cleaning cloths were observed on the front and back food prep counters. Lots of food debris were also observed on the back and front food prep area. The chef later clean the counters and the cleaning towels stored in the sink and surface sanitizer.- Ensure that food handlers clean and sanitize food contact surfaces regularly to prevent potential cross contamination.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • **The cooler under the grill was at 10C. Internal temperature of chicken nuggets inside the cooler was measured at 9C. Records revealed that the temperature inside the cooler taken at 11am same day was at 36F. Upon further investigation, it was discovered that cooler was unplugged from the wall. The chef said that must have been accidentally unplugged by a staff working behind the grill that afternoon. The cooler was plugged in and chef directed to monitor the cooler to ensure it maintains a temperature of 4C or colder- All other refrigerator and hot holding units maintained safe food temperatures.- Proper thawing in the cooler observed. Proper cooling using the walk-in cooler observed.
